Raw banana and avocado choc mousse
This is a gloriously smooth and delicious way to celebrate raw food while using up your ripe bananas and soft avocados.
It’s all dairy free, so you can serve it up to vegans too and if you happen to have paleo or raw foodies for dinner, this is a firm favourite.
I’ve also adapted this recipe to make both nectarine and berry mousses too.
Ingredients:
1 medium sized, ripe avocado
1/2 large ripe banana
1/4 cup raw cacao (you can substitute cocoa or carob)
1/4 cup pure maple syrup
2 teaspoons vanilla paste
Scoop the avocado out of its skin and discard the seed. Pop it into a blender with the skinned banana, cacao, maple syrup and vanilla paste. Blend til perfectly smooth, scraping the sides of the blender a few times.
Pipe into glasses or spoons as I have done. Enjoy your indulgence!
