Macadamia Flax Crackers with GG Global Gourmet Sumac and Sesame Topper

ab53950034So, you dont want to turn on the oven?
Maybe you have a dehydrator languishing in the cupboard?
While it’s not essential to have a dehydrator for this recipe, it is easy to make these without the use of an oven.
However, if you lack the dehydrator, follow my oven baking directions.

You’ll need

1/2 cup spring onion, finely diced
1 cup raw macadamias, soaked 10 minutes in filtered water to add a little moisture to them,before use
1 cup golden flax seed
1 clove crushed garlic
1 small teaspoon salt
3/4 cup water
1/4 cup olive oil
1 dessertspoon honey or agave sweetener
1 teaspoon cumin
1/4 teaspoon chili flakes
75 grams sumac and sesame topper by GG Gourmet

Chop the macadamias and onion into small pieces in a food processor.
Add flax seed, garlic, salt, water, olive oil and sweetener of your choice.
Whizz again until it all starts sticking together.
Spread onto an oven tray lined with baking paper OR onto a dehydrator tray with a teflex sheet. The mix should be 1/2 centimentre thick.
Mark into cracker sized squares with the back of a knife. Sprinkle over 75 grams of GG Global Sumac and Sesame topper. Press in a little with your hands.
If dehydrating, do so at 41C for 12 hours before flipping over and drying the other side a further 2-3 hours.
If using an oven: spread the mixture onto a baking paper sheet on a cookie tray. Bake in a cool oven 70-110C until crisp both sides.

Cool and store in a airtight container.
