Mushroom Powder & Cream of Mushroom Camping Soup

Soba Noodle & Cream of Mushroom Soup

Super simple and easy for camping and hiking or a quick soup at home. Serves 2

90 grams dried organic soba noodles (Japanese style wheat and buckwheat. They are very thin so cook quickly)

2 cups water

½ Massel vegetable stock cube

¼ cup dried mushroom flakes

1 tablespoon mushroom powder

1 heaped tablespoon coconut milk powder or cows milk powder

Put the filtered water, half a Massel stock cube and the dried mushroom flakes in a small saucepan and bring to the boil. Once boiling, add the soba noodles and mushroom powder, and turn down the heat to a gentle simmer.

Simmer long enough to cook your soba noodles. (It takes about 5 minutes)

Turn off the heat. Add the coconut OR cows milk powder and stir to mix.

Place half of the noodles each bowl. Pour the mushroom soup over the top and serve.

Now while it looks very brown, and the picture is boring, I can assure you it’s hard tpo photograph brown food. BUT, this soup is really nourishing and beautiful.
